Polk's Meat Products has been smoking sausage and ham in Magee, Mississippi since 1969, when founder Milton Polk started curing 15 hams a week as a retirement project. Now in its third generation of family ownership, the plant runs multiple fully cooked lines — smoked sausages, hams, boudin, and specialty items under five house brands — and calls itself the largest smoked meat processor in Mississippi. The facility consolidated into a purpose-built plant on Highway 49 in 2000 and put $3.4 million into a refrigeration system overhaul in 2016. About 100 people keep the smokehouses running, shipping product to grocery and foodservice accounts across the Southeast.
