The Lehnertz brothers founded the company in Houston, Texas, in 1946 and moved it to the Spokane area about a decade later, acquiring the current production facility in 1984. Giant smokehouses turn out roughly five tons of pork ribs a day and nearly 4,800 pounds of sausage, with finished product shipping to retailers from San Diego to Alaska. As of 2020 the plant ran with about 25 employees, making it a small, hands-on operation where the crew touches every step from seasoning through flash-freezing.
