Burger's Ozark Country Cured Hams runs a 300,000-square-foot smokehouse in California, Missouri, turning out roughly half a million country-cured hams a year alongside bacon, smoked turkey, and summer sausage. E.M. Burger sold his first six hams in 1927 using his German mother's curing recipe; today the third and fourth generations of the Burger family run the operation with around 200 full-time workers and seasonal help. Hams are dry-cured with salt, black pepper, and brown sugar, then smoked over hickory — some age more than two years before shipping. In 1956 the plant became the first country-cured meat company in the United States to earn USDA federal inspection, a distinction it still carries.
